No refined sugar and very little oil.

Recipe Ingredients for Healthy Carrot Muffins

2 cups oatmeal
4 cups whole wheat flour
2 tsps baking soda
4 tsps baking powder
2 tsps cinnamon
1/2 tsp allspice
2 cups grated carrots
1/3 cup canola oil
1/3 cup applesauce
1/2 cup honey
3 cups milk
2 tsps vanilla
4 eggs
1 1/2 cups raisins
1 1/2 cups walnuts

Recipe Directions for Healthy Carrot Muffins

  1. Preheat oven to 400 degrees. Sift together dry ingredients. Stir in remaining ingredients until moist; do not over-mix. Fill greased muffin tins about 2/3 full. Bake for 15 - 20 minutes.

  2. The batter will be quite thin, but they raise and bake nicely.
