Whole wheat flour, splenda and carrots

Recipe Ingredients for Healthy Carrot Muffins

1 cup whole wheat flour
1/4 cup whole wheat pastry flour
1/3 cup brown sugar, packed
1/3 cup splenda no calorie
2 tablespoons organic flax
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon organic sea salt
2 large eggs
1/3 cup extra virgin olive oil
1 tablespoon vanilla
1 3/4 cups grated carrot
1/2 cup canned unsweetened pineapple
1/8 cup ground walnuts

Recipe Directions for Healthy Carrot Muffins

  1. Preheat ove to 350 degrees and line muffin cups with paper muffin liners.

  2. Whisk the flours with the sugars, flax, cinnamon, baking powder, baking soda & salt in a medium bowl. In another medium bowl lightly whisk the egg, then whisk in the oil and vanilla extract.

  3. Quickly and lightly fold the wet ingredients into the dry ingredients wiht a spatula. Stir in the carrots and pineapple just until moist; the batter will be very thick. Divide the batter among 18 muffin cups (each a little over 1/2 full) and sprinkle a bit of ground walnuts on top of each. Bake until golden about 25 to 30 minutes. Turn muffins out of the tins and cool on a rack.
