Recipe Ingredients for Healthy Carrot Muffins

1 cup Stone Ground Whole Wheat Flour
1/2 cup Soy Flour
2 servings FlaxSeed Meal
1 cup spelt flour
1 scoop protein powder
1/4 cup canola oil
1/2 cup Brown Sugar
2 cups Skim Milk
2 medium Apples, Pealed
1 1/2 cup Shredded Carrots
4 Egg Whites
1 cup cranberries
1 tsp vanilla extract
1/2 tsp ground cloves
2 tsp nutmeg
1 tbsp crystallized ginger, chopped
2 tsp cinnamon
1 tsp salt
3 tsp baking soda
3 tsp baking powder
1/4 cup orange juice

Recipe Directions for Healthy Carrot Muffins

  1. Mix dry ingredients and spices in parge bowl.

  2. In another bowl, mix oil, eggs, OJ and milk and whip till foamy

  3. In another bowl, Mix carrots, apples cranberries and ginger

  4. Quickly fold wet into dry, then add carroy, apple mix.

  5. Pour into greased mufin cups and cook at 350 for 20-25 mins.
