Healthy Butternut Squash and Apple Soup.

Recipe Ingredients for Healthy Butternut Squash and Apple Soup

3 cup, cubes Squash, Winter, Butternut
2 medium apple Apples
5 tsp Chicken Stock
1 dash Pepper, Black
1 tsp Onion Powder
1 tsp Garlic Powder
4-5 cup (8 fl oz) Water
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Healthy Butternut Squash and Apple Soup

  1. Cook Squash that has been sliced in half with guts removed in a 400 degree oven for approx 15-20 mins or until soft enough to scoop out of skin.

  2. Add all ingredients to large pot and bring to a boil. Cover and adjust heat to medium-low and simmer for 30 mins.

  3. Once apples and squash are so soft they are falling apart, puree and add all ingredients back to pot to keep warm.

  4. Serve.
