Use very good cocoa such as "Callebaut Belgian cocoa powder, 22-24% fat content". I used whipped Earth Balance although recipe calls for regular, & instant espresso. Do NOT over bake or they are very dry! Great with coffee or tea.

Recipe Ingredients for Healthy Brownies

1 t instant coffee powder or granules
2 t vanilla
1/2 c whole wheat pastry flour
1/2 c unsweetened cocoa
1/4 t baking powder
1/4 t salt
150 g Sucanat
1/4 c trans-fat free vegetable oil spread
3 large egg whites

Recipe Directions for Healthy Brownies

  1. Preheat oven to 350 degrees. Grease 8 X 8 baking pan. In cup, dissolve coffee in vanilla.

  2. In small bowl, combine flour, cocoa, baking powder and salt.

  3. In medium bowl, whisk Sucanat, vegetable oil spread, egg whites and coffee mixture until well mixed; then blend in flour mixture. Spread in prepared pan.

  4. Bake 22-24 min or until toothpick inserted 2" from edge comes out almost clean.

  5. Cool in pan on wire rack, about 2 hours.

  6. Cut into 16 pieces (4 X 4).
