I took Hungry Girl's recipe and tweaked it, taking out cheddar cheese and adding spinach. Super satisfying, fulling, and delicious! Again: this is Hungry Girl's recipe!! I simply tweaked it.

Recipe Ingredients for Healthy Breakfast Scramble

0.67 cup Hash Browns
0.67 cup Egg Beaters
1 pattie Veggie Breakfast Sausage Patties
1 serving size(21 g) Light Swiss Original
0.5 cup, chopped Onions
0.5 tsp Garlic
1 cup, diced Mushrooms, Portabella
1 cup Spinach

Recipe Directions for Healthy Breakfast Scramble

  1. Coarsely chop onion and mushroom; set aside. Microwave Morningstar patty for 45 seconds, let cool, and chop until crumbled

  2. In a large non-stick skillet, spray with cooking spray and saute onions, hashbrowns, and garlic over medium heat until softened and starting to brown. Add mushrooms, spinach, and seasonings of your choice (I like salt, pepper, cayenne pepper, cumin, and chili pepper); cook until spinach has wilted and mushrooms have softened.

  3. Add crumbled "sausage," cheese wedge, and egg beaters; scramble until cooked thoroughly and cheese is melted.

  4. Serve and enjoy!
