Made without oil, and minimum sugar, but totally delicious!

Recipe Ingredients for Healthy Bran Muffins

1 1/2 cup wheat bran
1 cup skim milk
1 tbsp lemon juice
1/3 cup applesauce
1 egg
2/3 cup brown sugar
1/2 tsp vanilla
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup raisins

Recipe Directions for Healthy Bran Muffins

  1. Preheat oven to 375F, and grease muffin tins or line with muffin paper.

  2. Mix together wheat bran, milk and lemon juice. Let stand 10 minutes.

  3. Beat together applesauce, egg, sugar, and vanilla, then add to the bran mixture.

  4. Sift together dry ingredients. Mix into wet ingredients, just until blended.

  5. Fold in raisins, and any other additions (such as flax seeds or nuts) and spoon batter into muffin tin.

  6. Bake for 15-20minutes.
