These muffins are moist with a lot of fiber without a ton of calories and they really fill you up. Plus you can make the batter and put it in the frigde and make muffin as you need them.

Recipe Ingredients for Healthy Bran Muffins

3 cups wheat bran
1 cup water
1 cup brown sugar
1/2 cup margarine
2 1/2 cups white whole wheat flour
2 tsp baking soda
2 eggs
2 cups 2% milk

Recipe Directions for Healthy Bran Muffins

Preheat Oven to 400 degrees. Combine 1 cup of bran with water and let bran soak in. Beat sugar and maragrine in large bowl. Stir in all other wet ingredients. Mix dry ingredients in separate bowl. Add wet bran to wet ingredients and slowly stir in dry ingredients. Batter will be thick. Fill muffin tins 3/4 of the way and bake for 15-17 minutes.
