Yummy for breakfast or dinner, with or without syrup!!

Recipe Ingredients for Healthy Blueberry Pancakes

1 c whole wheat flour
2/3 c flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp ground nutmeg
2 large eggs
1 c 1% milk
1 c vanilla yogurt
1/4 c canola oil
1/2 tsp vanilla
1 tsp orange or lemon zest
1 1/2 c blueberries

Recipe Directions for Healthy Blueberry Pancakes

Mix first 7 ingredients and set aside. Lightly beat eggs and add milk, cottage cheese, oil and vanilla and mix thoroughly. Make a well in the dry ingredients and pour in wet ingredients. Mix thoroughly. Fold in zest and blueberries. Add a little more milk if batter is too thick. Use 1/4 to 1/3 cup of batter for each pancake.
