Not as sweet as the sugar topped muffins that the stores sells but a good sub.

Recipe Ingredients for Healthy blueberry muffins

1 1/4 cup whole wheat flour
3/4 cup rolled oats
2 tsp baking powder
1/2 tsp baking soda
1/4 cup egg whites
1/4 tsp salt
3/4 cup fat free milk
1/2 cup brown sugar
1/8 cup unsweetened applesauce
1/2 tsp vanilla
3/4 cup blueberries

Recipe Directions for Healthy blueberry muffins

  1. Preheat oven to 400 degrees.

  2. Combine flour, oats, baking powder/soda and salt.

  3. Combine egg, milk, brown sugar, applesauce and vanilla in another bowl.

  4. Add this mixture to the dry mixture.

  5. Stir till lumpy.

  6. Add in blueberries.

  7. Cook 16 - 18 minutes.
