Recipe Ingredients for Healthy Beef Barley stew

1 lb lean ground beef
15 oz stewed tomatoes
15 oz diced tomatoes
1 can tomato paste
1 cup chopped onion
2 cloves minced garlic
1 cup celery
1 1/2 cup carrots
1 cup barley
16 oz frozen mixed vegetables
1/2 tsp basil
8 cups water

Recipe Directions for Healthy Beef Barley stew

  1. Brown beef, onion and garlic. in 5 qt dutch oven Drain

  2. Add all other ingredients except frozen vegetables.

  3. Bring to a boil, reduce heat and simmer a mininum of 1 hour. ( like to simmer for several hours)

  4. Add frozen vegetables about 15-30 minutes before serving.
