Recipe Ingredients for healthy banana walnut muffins

1/2 c. sugar
1/2 c. butter
2 eggs
2 ripe bananas, mashed
3/4 c. honey
1/4 c. milk
1 1/2 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cinnamon
3/4 c. oatmeal
1/4 c flax seed
1 c. diced prunes
1/2 c. walnuts

Recipe Directions for healthy banana walnut muffins

  1. cream the sugar and butter (add less sugar now and more honey later if you prefer)

  2. add the eggs, bananas, honey and milk

  3. add flour, baking powder, baking soda, salt, nutmeg and cinnamon. stir only until blended

  4. fold in oatmeal, flax, nuts and raisins (or prunes).

  5. bake at 375 for 20 minutes. remove from pan.

  6. yum!
