Recipe Ingredients for Healthy Banana Muffins

1 large (8" to 8-7/8" long) Bananas
1 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 cup dry Old Fashioned Quaker Oats
2 large egg Eggland's Best Egg
8 oz SPLENDA No Calorie
0.25 cup Applesauce
0.25 cup Coconut Meat, Dried (Desiccated), Sweetened, Flaked, Packaged
1 tsp Vanilla Extract
0.25 cup, chopped Pecans
1 tsp Nutmeg, Ground
1 tsp Cinnamon, Ground
0.041 oz Coriander Powder

Recipe Directions for Healthy Banana Muffins

  1. Mix wet ingredients (bananas, eggs, vanilla and applesauce).

  2. Mix in dry ingredients (sugar, Splenda, baking powder/soda, coconut, pecans, spices, with oats and flour last).

  3. Lightly spray with Pam or use paper in muffin tins.

  4. Spoon mixture into pans.

  5. Bake at 350 degrees for 25 minutes or until risen.
