Recipe Ingredients for Healthy Banana Muffins

4 eggs
1 cup sugar
1 cup unsweetened applesauce
1 tablespoon safflower oil
4 ripe bananas
2 1/2 cups wheat flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Recipe Directions for Healthy Banana Muffins

  1. Preheat oven to 350 degrees

  2. Beat eggs well. Gradually add sugar, applesauce, and oil. Stir in mashed bananas.

  3. In a large bowl, mix together flour, baking powder, baking soda, and salt.

  4. Add egg/banana mixture, stirring just until blended.

  5. Spray muffin tin with a canola oil or olive oil non-stick spray. Fill tins to the top. Bake for 10 - 13 minutes at 350 degrees.
