Recipe Ingredients for Healthy Banana Bread

2 cups whole wheat flour
1 cup all-purpose flour
1 cup oatmeal
1 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cup organic sugar
2/3 cup canola oil
2 large eggs
2 egg whites
1/2 cup soy milk
2 cups mashed bananas
2 teaspoons vanilla extract

Recipe Directions for Healthy Banana Bread

  1. Comine the dry ingredients in a bowl.

  2. Mix together sugar, oil, eggs, soy milk, bananas, and vanilla.

  3. Carefully stir the wet mixture into the dry mixture, only stirring as much as necessary to thoroughly combine the two.

  4. Pour into 2 large bread pans (3 small bread pans will equal one large one), and bake for about 50 minutes at 350 degrees, or until a cake tester comes out clean. (Small loaves will take about 40 minutes.)
