Recipe Ingredients for Healthy Banana Bran muffins

1 1/2 c whole wheat pastry flour
1/2 c wheat bran
1 1/2 tsp Baking Soda
1/2 tsp Kosher Salt
1/2 tsp ground Cinnamon
1/4 tsp ground cardamom
3 Bananas
1 cup brown sugar
4 tbsp grapeseed oil
3/4 cup Yogurt
2 Eggs
1 1/2 tsp Vanilla Extract
3/4 cup Walnuts, chopped and toasted

  3. This batch made 12 regular size muffins, plus 24 small ones (3 of the small ones are equivalent to 1 regular size one, thus 20 servings)

  4. i.e. one serving is one regular size muffin or 3 small ones.

  5. Probably could have used little less sugar. next time I will put only half a cup of brown sugar
