Recipe Directions for healthy aubergine curry for 1

bake aubergine on medium high for 40 mins while chopping one onion, (soften in microwave for 3 mns sprinkled with water). Fry onion with garlic, ginger and salt for 2 mins, add curry powder and stir for 1 min, add chopped and skinned tomatoes and stir in for 3 mins, add inside of aubergine and mash into onion mix and heat through for a few mins. Serve with cottage cheese and chappatis.
