Recipe Ingredients for Healthy Apple Pie Muffins

2 tablespoons firmly packed brown sugar
2 tablespoons whole wheat pastry flour
1 tablespoon butter, melted
1 teaspoon honey
1 teaspoon cinnamon
3/4 cup firmly packed brown sugar
1/3 cup canola oil
1/3 cup unsweetened applesauce
1/4 cup egg beaters
1 1/2 teaspoons vanilla
2 cups whole wheat pastry flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
2 cups apples, diced peeled firm tart
1/4 cup chopped walnuts
1 teaspoon Cinnamon (optional)

Recipe Directions for Healthy Apple Pie Muffins

  1. Topping: In a small bowl toss together sugar, flour, butter, honey and cinnamon until crumbly; set aside.

  2. Muffins: In a large bowl whisk together brown sugar, oil, applesauce, egg beaters and vanilla until smooth.

  3. In a separate bowl, sift together flour, soda and salt.

  4. Stir oil mixture into flour mixture alternately with buttermilk.

  5. Fold in apples and walnuts, mixing just until combined.

  6. Spoon into greased muffin cups filling 3/4 full.

  7. Sprinkle topping over evenly.

  8. Bake at 350F for 25-30 minutes or until golden brown and tops spring back.
