Recipe Ingredients for Healthy Appetite Wholemeal blueberry muffins

300 g wholemeal flour
1 1/2 tsp baking powder
1 tsp baking soda
100 g brown sugar
275 ml low fat buttermilk
290 g banana (2 med-large, very ripe)
1 egg
75 ml grapeseed oil (or olive oil, or melted butter)
200 g blueberries (frozen or fresh)
1 tbsp raw sugar (optional)

Recipe Directions for Healthy Appetite Wholemeal blueberry muffins

  1. Heat the over to 180C

  2. line a 12-hole muffin tin with muffin cases (i use silicon cases)

  3. Peel the bananas and mash with a fork

  4. Mix the flour, baking powder, baking soda and brown sugar together. Make a well in the centre and add buttermilk, egg, oil and bananas. Quickly fold the ingredients together until just incorporated. Take care not to overmix.

  5. Tip the blueberries and give the batter one or two stirs.

  6. Spoon the batter into the muffin cases ang sprinkle with the raw sugar. The cases will be quite full.

  7. Bake for 20-25 minutes until golden brown on top.

  8. Leave to cool for a couple of minute, then transfer to a wire rack to cool completely.
