Recipe Ingredients for Healthly Blueberry Muffins

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup brown sugar
1/4 cup wheat bran
1/4 cup quick cooking oats
1/4 cup all bran buds
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup blueberries
1/4 cup slivered almonds
1 banana, mashed
1 cup skim milk
1 egg
1 tablespoon fat free yogurt
1 teaspoon vanilla

Recipe Directions for Healthly Blueberry Muffins

  1. Preheat oven to 350 degrees F. Line 12 cup muffin tin with paper muffins cups.

  2. In a large bowl, stir together the flour, sugar, oat bran, oats, bran buds, baking powder, baking soda and salt. Gently stir in the blueberries and almonds.

  3. In a separate bowl, mix together the mashed banana, milk, egg, yogurt and vanilla.

  4. Pour wet ingredients into dry, and mix just until blended.

  5. Spoon into muffin cups, filling almost to the top of each.

  6. Bake for 15 to 18 minutes in oven or until the tops of the muffins spring back when lightly touched.
