A super healthy version of a classic comfort food that doesn't sacrifice the deeply satisfying beef flavor and instead uses a clever balance of ingredients to achieve all the taste with no guilt at all!

Recipe Ingredients for Healthily Hijacked Stuffed Bell Peppers

9 red bell peppers
2 cups cooked brown rice
1 lb extra lean ground beef
1/2 cup TVP
6 cups tomato sauce
1 small onion, diced
1 tsp Italian seasoning
3 cloves garlic, crushed
1/2 tsp salt
1 tsp pepper
3 T chopped fresh flat-leaf parsley

Recipe Directions for Healthily Hijacked Stuffed Bell Peppers

  1. Preheat the oven to 350 F. Cook the brown rice to package instructions using salted water (approximately 35 minutes) while washing and preparing the bell peppers and bell pepper stuffing.

  2. Peppers: Cut off the tops of the bell peppers and remove any of the seeds or veins. I like to save the tops and include them in the baking, using them for presentation. Flatten the peppers by running the knife along the bottom being careful to not create a hole.

  3. Filling: Combine all of the ingredients, using only 2 cups of the spaghetti sauce (reserve the rest for presentation). When the rice is cooked add it to the mixture and stuff it into the peppers leaving a little well in the center of each.

  4. Sauce: the remaining sauce can be kept warm in a covered sauce pan with the 2 cloves crushed garlic.

  5. Set the stuffed peppers in a (1-2) 13x9 glass dish(es) that has been sprayed with a non-stick product. Place the peppers in the oven for 35-45 minutes (internal heat should be at least 160 F). Place each pepper on a plate with a good lip and drizzle a fair amount of sauce over the top, sprinkling the left over parsley. A bit of cracked pepper is always welcome before serving!
