Got this recipe off of EatBetterAmerica.com and just made a couple of small changes to reduce the fat and calories. Enjoy!

Recipe Ingredients for Healthified Carrot Cake

1/2 cup Egg Beaters Egg Whites
1/3 cup Mott's Natural Unsweetened Applesauce
1/3 cup canned pumpkin (not pumpkin pie mix)
1/4 cup fat-free skim milk
1 tsp. vanilla
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup Splenda Sugar Blend
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. ground cinnamon
2 cups carrots, shredded
4 oz. Cream Cheese, Fat Free
2 tbsp. I Can't Believe It's Not Butter, softened
1 1/2 tsp. vanilla
3 cups powdered sugar
2 tsp. fat-free skim milk
1/3 cup pecans, chopped

Recipe Directions for Healthified Carrot Cake

  1. Preheat oven to 350 degrees and spray the bottoms of two 8" or 9" pans w/nonstick spray. Mix all wet ingredients together in a large bowl. Add the dry ingredients and mix. Fold in the carrots. Divide evenly into the two pans and bake approx. 25 minutes or until a toothpick comes out clean. Let cool 10 minutes and then remove from pans and transfer to wire racks to cool for about an hour.

  2. In medium bowl, beat cream cheese and butter with electric mixer on medium speed until creamy. On low speed, beat in 1 1/2 teaspoons vanilla until well blended. Beat in powdered sugar, 1 cup at a time, until smooth. If necessary, add milk, 1/2 teaspoon at a time, until frosting is desired consistency. Spread frosting between cake layers and on top. Sprinkle with pecans.
