Alright, I'm on the quest to healthy, normal sized muffins that I can have for breakfast WITH my coffee and an apple (to total my 200 breakfast limit).

Recipe Ingredients for The Healthiest Muffins I've ever made

medium (7" to 7-7/8" long) Bananas
1/2 cup Apple Sauce Unsweetened Organics
3 tbsp Cocoa, Dry Powder, Unsweetened
30 grams SPLENDA No Calorie
0.25 cup, packed Sugars, Brown
3 large Egg, White
1 tbsp Cinnamon, Ground
2 tsp Nutmeg, Ground
1 tsp Baking Soda
2 tsp Baking Powder
0.5 cup Bran Buds
1 cup boiled Pumpkin
0.13 cup Lemon Juice
0.5 cup Wheat Flour, Whole-grain

Recipe Directions for The Healthiest Muffins I've ever made

  1. Preheat oven at 350

  2. Mash riped bananas, pumpkin purée and apple sauce together

  3. Reduce all bran buds to dust, mix with flour, sugars, baking soda, powder, cinnamon, cocoa powder and nutmeg

  4. Mix dry ingredients with the purée, add the 3 egg whites (room temperature, slightly beaten)

  5. Bake for 20-25 minutes, or until you can stick a fork through the muffin

  6. enjoy the deliciousness
