Just out of my head recipe. I added hot peppers to mine and served it with a little sour cream.

Recipe Ingredients for healthier tamale pie

1 tbsp Olive oil
1/2 cup onion
1/2 cup bell pepper
1 lb. ground turkey
1 tsp ground coriander
2 tsp chili powder
2 tbsp fresh oregano
28 oz. diced tomatoes
1 tsp salt
1 can corn
2 cups cornbread
1 egg
1/4 cup fat free milk
6 oz grated Cheddar cheese

Recipe Directions for healthier tamale pie

  1. saute the onion and pepper in olive oil add herbs and spices salt and ground turkey. brown and crumble turkey. Once browned add tomatoes and drained can of corn. Make Jiffy corn bread as directed with pan of turkey and veggies simmer.

  2. Little grease a 13X9 baking dish add turkey mix then spoon corn bread every few inches apart until mostly covered.

  3. Bake at 375 degrees until bread is set and starts to brown a little then take out and sprinkle with cheese.
