Layered mexican pie with extra vegetables, less cheese, and chicken

Recipe Ingredients for Healthier Taco Bake

3 yellow squash, sliced
15 oz black beans
28 oz diced tomatoes
2/3 cup salsa
1 lb chicken breast
3 whole wheat tortillas
1 green pepper
1 onion
1 cup cheese

Recipe Directions for Healthier Taco Bake

  1. Cook and shred chicken

  2. layer one tortilla in 9 inch pie plate

  3. layer one half of all ingredients

  4. layer second tortilla

  5. repeat with second half of ingredients (except 1/2 cheese and salsa)...place final tortialla on top; spread with 1/2 of the salsa

  6. Bake 20 minutes uncovered, place cheese on and bake 10 more minutes uncovered, then put foil over the top and bake until heated through...10-15+ minutes longer. Oven temp is 350.
