This is a crustless pie, but you could easily pour this into a prepared pie crust if you want the not-as-healthy version. :)

Recipe Ingredients for Healthier Sweet Potato Pie

1 medium sweet potato
1/2 cup evaporated milk
3 egg whites
1/2 cup Splenda
1/2 cup Joseph's Original Sugar Free Maple Syrup
2 tablespoons butter
1 tablespoon vanilla extract
1/2 tablespoon orange extract
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon grated fresh ginger
1/2 teaspoon lemon zest

Recipe Directions for Healthier Sweet Potato Pie

  1. Wash the sweet potato and rub it down with a teaspoon or two of oil. Roast for 35-45 minutes until soft. Let cool for 15-30 minutes and then peel (should pretty much slide off, or you can scrape the flesh from the skin with a spoon). Remove any long/large strings from the sweet potato and then mash it (just as the point of no lumps).

  2. Add the remaining ingredients to the mashed sweet potato and then beat by hand or a mixer, until butter lumps disappear.

  3. Spray a shallow pie pan with cooking spray, and then pour the mixture into it.

  4. Bake at 350 for 40-50 minutes until the pie is set, and a knife comes out (mostly) clean when you insert it in the center.
