I like to make these in individual ramekins or two-serving ramekins. They cook more quickly and serve easier. This dessert is a little healthier than most cheesecakes, as it has less cream cheese and no crust. It also has the fiber and beta carotene of pumpkin. Try serving it instead of pumpkin pie for Thanksgiving.

Recipe Ingredients for Healthier Pumpkin Cheesecakes

12 ounces neufchatel cheese
29 ounces pumpkin
2 tbsp honey
1/4 cup brown sugar
1 cups sugar
4 eggs
1/4 cup sour cream
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1 1/4 tsp salt
1/4 cup lemon juice
24 ounces evaporated milk

Recipe Directions for Healthier Pumpkin Cheesecakes

Cream the neufchatel cheese in mixer. Add sugars, honey, and pumpkin. Add eggs on at a time, then the sour cream and spices. Add salt, lemon juice, and drizzle the cans of milk in slowly. Pour into non-stick-sprayed, 8-10 oz. ramekins or place in three deep pie dishes. Bake at 400 for 15 minutes, then reduce heat to 375. Bake an additional 20-35 minutes, until 1 inch in the center is only slightly wobbly. Remove from oven and cool in pans on wire rack completely. Cover and refrigerate 3 or more hours. Serve with light whipped cream or dust with powdered sugar or cocoa.
