1/2 cup low-fat ricotta cheese
1/2 cup peanut butter
1/8 cup Vanilla Nonfat Yogurt
2 tablespoons unsweetened applesauce
1 cup brown sugar
1/2 cup sugar
1 egg
2 egg white
1 teaspoon vanilla
1 cup wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
3 cups rolled oats
1/2 teaspoon salt
1/2 cup pecans
3/4 cup raisins

Recipe Directions for Healthier Pride of Iowa Cookies

  1. Cream ricotta, peanut butter, yogurt, applesauce, and sugar.

  2. Mix in flours, salt, soda, powder and oats. Stir in egg, egg whites, vanilla, pecans and raisins.

  3. Drop onto baking sheet, bake at 350 for 12 minutes
