I changed the recipe from The Spotted Lamb to use low fat cheddar cheese, skim milk, and to add the bell peppers and onion. This brought the points+ value to 6/serving

Recipe Ingredients for Healthier Potato Casserole - Adapted from The Spotted Lamb

30 oz frozen hash browns
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped onion
3/4 cup low sodium chicken broth
1/2 cup skim milk
12 oz No Fat Plain Greek Yogurt
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Black Pepper
1 tsp Italian Seasoning
1/2 tsp Seasoned Salt
1 Salt
1 Pepper
4 oz Low Fat, Cheddar Or Colby Cheese

Recipe Directions for Healthier Potato Casserole - Adapted from The Spotted Lamb

  1. Preheat oven to 350 degrees.

  2. While oven is preheating, spray a 10" skillet with some cooking spray and cook red and green bell pepper and onion for a few minutes until just starting to get soft.

  3. In a large bowl, combine all of the ingredients until well incorporated. Spray a 9 X 13 inch baking pan with cooking spray. Spread potato mixture evenly in baking pan. Place in oven and cook for about 35 minutes until bubbly. Enjoy!
