Replacing the usual white flour, sugar and refined oils with better options.

Recipe Ingredients for Healthier pancakes

1 large egg
1 c whole wheat flour
3/4 c 1% milk
2 T 1% milk
2 T coconut oil, melted
3 t baking powder
1/4 t salt

Recipe Directions for Healthier pancakes

  1. Beat egg in bowl with hand beater in fluffy. Beat in remaining ingredients until smooth.

  2. Heat griddle or skillet over medium heat. Spray with cooking spray.

  3. For each pancake, pour about 1/4 C of batter. Wait until it's bubbly on top and puffed and dry around edges before flipping.

  4. Top with fruit or real maple syrup (not that fake, processed pancake syrup, or you defeat the purpose of this recipe!)
