Macaroni cheese with butternut squash added

Recipe Ingredients for Healthier Macaroni cheese

1 lb macaroni
1 1/2 cups skimmed milk
200 g edam cheese
3 cups butternut squash
4 tbsp reduced fat margarine
5 tbsp all purpose flour

Recipe Directions for Healthier Macaroni cheese

  1. Roast the butternut squash until soft and scoop out flesh and puree

  2. Boil pan of water and cook pasta

  3. Drain and set aside

  4. Melt butter

  5. Make a roux

  6. Start to add milk when the roux has formed

  7. Add the cheese gradually till melted

  8. Mix cheese sauce with butternut squash

  9. Mix pasta in

  10. Put in caserole dish and cook for 20 minutes on 200 until going crispy on top
