My attempt to make Mac & Cheese a little bit healthier.

Recipe Ingredients for Healthier Mac & Cheese

1 teaspoons olive oil
2 cloves garlic
1/4 cup onion, chopped
1/4 cup whole wheat flour
6 oz low-fat sharp cheddar cheese
12 oz fat free evaporated milk
1 teaspoon paprika, smoked Spanish variety
1/2 teaspoon salt
3/4 teaspoon black pepper
12 oz whole wheat macaroni or quinoa shell pasta

Recipe Directions for Healthier Mac & Cheese

  1. Combine olive oil, garlic, and onion in medium saucepan. Saute until onions are soft and clear.

  2. Add flour and cook on medium heat, stirring constantly, until mixture is bubbly. Add evaporated milk, a little at a time, and continue to cook until mixture is thickened. Add 4 oz of cheese, paprika, salt, and pepper (or more of seasonings, to taste).

  3. Meanwhile, cook pasta according to manufacturer's recommendations. Drain and mix sauce with pasta. Pour into lightly greased baking dish (deeper with smaller dimensions is preferable) and top with remaining cheese. Bake at 375 degrees for 35 minutes, or until cheese is bubbly.
