Recipe Ingredients for Healthier Mac & Cheese, Part II

3 tablespoons extra-virgin olive oil
1 clove garlic
1 tablespoon mustard powder
2 tablespoons whole-wheat flour
2 teaspoons paprika
2 cups skim milk
1 medium egg
9 oz low fat cheddar cheese, shredded
8 oz whole wheat macaroni or quinoa macaroni

Recipe Directions for Healthier Mac & Cheese, Part II

  1. Heat oil in medium saucepan over medium heat. Add crushed garlic clove, mustard, and flour. Cook, stirring constantly, for 5 minutes. Add paprika, one bay leaf, and milk. Cook for 10 minutes, stirring constantly. Temper in egg and add 3/4 of the cheese. Season to taste with salt and pepper

  2. Meanwhile, shred cheese and cook macaroni according to package; drain. Return to pot and fold in cheese sauce.

  3. Transfer to 9"x13" baking dish, top with remaining cheese, and bake for approximately 35 minutes at 350 degrees, or until cheese is bubbly.
