Recipe Ingredients for Healthier Lasagna

7 oz whole wheat lasagna
11 oz part skim mozzarella
15 oz part skim ricotta
1/3 cup Parmesan cheese
9/10 eggplant
24 ounces tomato sauce
1 cup spinach
1/5 cup parsley

Recipe Directions for Healthier Lasagna

  1. Use baked or grilled eggplant to replace half the layers of noodles.

  2. Reduce the Mozzarella and Parmesan to make it even lower calorie. I'm heavy handed

  3. The Mozzarella probably isn't even needed and eliminating that would reduce the calories about 100 per serving, I dont' mind the extra calories for good tasting food as long as I don't go over the daily limit.
