(Healthier but not less calories!) This came out a little dry with all the wheat germ and whole wheat flour - next time add at least another half cup of apple sauce.

3/4 cup flour
1/2 cup wheat germ
3/4 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
4 bananas, mashed
1/2 cup unsweetened apple sauce 87334
1/3 cup packed brown sugar
25 g (1/9 cup) margarine, melted 120800
2/3 cup ground flaxseed
1 egg
1/2 oz vanilla 80616
1/2 cup mixed nuts, chopped
1/4 cup raisins
1/4 cup dried apricots, chopped
1/3 cup dried cherries 95421
1/4 cup crystallized ginger 115792

Recipe Directions for Healthier Knock Out Muffins

  1. # Melt butter in bowl.

  2. # Stir in wet ingredients (including sugar).

  3. # Mash in banana.

  4. # Mix dry ingredients in larger bowl.

  5. # Mix wet into dry until just combined.

  6. # Spray 16 muffin cups.

  7. # Bake 20 minutes at 400F.
