A healthier take on General Tso's chicken. Serve with brown rice, and vegetable of your choosing.

Recipe Ingredients for Healthier General Tso's Chicken

4 cups Cooked Brown Rice
1 1/2 cup Chicken Broth, reduced sodium
3 tsp Cornstarch
4 tbsp No Calorie Sweetener
4 tbsp Soy Sauce
2 tbsp White Wine Vinegar
1 tsp Ginger, Ground
8 medium Green Onions, or Scallions
4 cloves Garlic
1 tsp Red Pepper Flakes
2 lbs Chicken Breasts

Recipe Directions for Healthier General Tso's Chicken

  1. Cook the rice according to package directions.

  2. In a medium bowl, whisk together the chicken broth, cornstarch, Splenda, soy sauce, vinegar and ginger. Set aside.

  3. Heat oil in a large skillet over medium-high heat. Add green onions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over (~5 minutes).

  4. Add reserved sauce and simmer until sauce thickens and chicken is cooked through (~3 minutes).

  5. Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.
