Uses turkey bacon and skim milk. Leave out the chicken and use only 12 slices turkey bacon for a lighter version. For more visual interest, use 1 9 oz package spinach fettuccine and 1 9 oz package of regular (white) fettuccine.

Recipe Ingredients for Healthier Fettuccine Carbonara

18 oz. spinach pasta
1 cup frozen peas
1 cup mushrooms, chopped
1 medium onion, chopped
6 cloves garlic
1 tbsp olive oil
16 slices turkey bacon, cubed
14 oz. chicken breast
2/3 cup egg whites
2/3 cup skim milk
4 tbsp skim milk
1 tsp black pepper
1 tsp crushed red pepper
1/2 cup parmesan cheese, grated

Recipe Directions for Healthier Fettuccine Carbonara

  1. Boil water for pasta. While water is boiling, saute chicken in nonstick pan until cooked through, remove. When cool, dice.

  2. In same pan, saute turkey bacon until evenly browned, remove.

  3. In same pan, heat olive oil, saute garlic and onion 5 mins until carmelized.

  4. In bowl, mix together egg, milk, pepper, and cheese.

  5. Cook pasta according to package directions. In last 3-5 mins, add peas. Strain and return pasta and peas to warm pot.

  6. Add bacon, garlic, and onions to pasta. Pour milk mixture over pasta and stir. Turn on low heat, stir until sauce thickens and evenly coats pasta and bacon.

  7. Transfer to plates/bowls, top with diced chicken. Sprinkle a little more cheese and serve.
