3 large eggs
1/2 cup fat-free cottage cheese
3/4 cup skim milk
1 tsp. flour
2 1/2 oz. frozen spinach
6 oz. Canadian bacon, chopped
1 dash nutmeg
1 dash freshly ground black pepper
1/2 med. yellow onion, minced
1 small potato, thinly sliced
2 tsp. olive oil
1/4 cup parmesan cheese
1/4 cup grated gruyere cheese
5 mushrooms, sliced
1 garlic clove, minced

Recipe Directions for healthier crustless quiche (w/ spinach, mushrooms and canadian bacon)

  1. Preheat oven to 325 degrees

  2. whisk together eggs, milk, cottage cheese, and flour. season with salt, pepper, and nutmeg

  3. sautee onions and garlic in olive oil for about 5 minutes; strain

  4. put spinach in a food processor until finely minced.

  5. add chopped bacon to egg mixture

  6. arrange potato slices in concentric circles on bottom and sides of pan. sprinkle with salt and pepper. cook without turning for about 8-10 minutes.

  7. sprinkle remaining cheese over potatoes. cover cheese with cooked onions and garlic.

  8. bake for 45 minutes or until just set.
