Healthier version of the yummy Crispy Rosemary Chicken and Potatoes.

Recipe Ingredients for Healthier Crispy Rosemary Chicken and Potatoes

12 oz boneless skinless chicken breast
6 medium red potatoes
2 medium yellow onions
9 cloves of garlic
1 sweet potato
1 tbsp dried rosemary
2 tsp dried rosemary
1 tbsp dried basil
2 tbsp olive oil

Recipe Directions for Healthier Crispy Rosemary Chicken and Potatoes

  1. Preheat oven to 400

  2. Dice potatoes, onions, and sweet potato.

  3. Peel and lightly crush garlic cloves

  4. Combine all ingredients in a baking dish, if desired add salt and pepper to taste, and mix well.

  5. Place in preheated oven and bake for about 1 hour or until potatoes are crispy and chicken is cooked through.

  6. Frozen chicken works best for this but if using fresh add it about 30 minutes into cooking time.

  7. Serve with ranch dressing or bbq sauce if desired.
