Lots of variations possible. Take out the bacon to reduce fat. Adding chicken is another great option.

Recipe Ingredients for Healthier Corn Chowder

12 oz. corn
2 Carrots
2 stalks of Celery
3 oz. bacon
2 yellow squash
1 small zuchini
2 medium potatos
16 oz. salsa
5 1/2 c. chicken stock
1/2 c. skim milk
4 oz. Velveeta
6 T Low Fat Sour Cream

Recipe Directions for Healthier Corn Chowder

Saute Bacon carrots and celery. Microwave Potatoes Add stock. Add rest of Vegatables. Cook till soft. Add Salsa, Cheese and Milk. Season to taste. (add Cumin and Chipotle to add spice and heat.)
