A healthier version of my favorite corn casserole.

Recipe Ingredients for Healthier Corn Casserole

2 cups whole kernel corn
1 3/4 cups creamed corn
1 cup low fat buttermilk
1 1/2 cup corn muffin mix
2 tablespoons butter, melted

Recipe Directions for Healthier Corn Casserole

Preheat oven to 350 degrees. Spray 9 x 13" baking pan with cooking spray. Place melted butter in large mixing bowl. Stir in the rest of the ingredients until no lumps are visible. Pour into baking pan. Bake for 40 minutes or until toothpick inserted in center of pan comes out clean.
