Recipe Ingredients for Healthier Coffee Cake Muffins

1 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup low-fat ricotta cheese
1/2 cup fat free sour cream
1/4 cup unsweetened applesauce
1/4 cup Vanilla Nonfat Yogurt
3/4 cup granulated sugar
1 teaspoon vanilla extract
1 egg
2 egg whites
2 apples
1/4 cup brown sugar
1/4 cup uncooked quick oats
1/2 tablespoon all purpose flour
1/8 teaspoon ground cinnamon
1 tablespoons butter

Recipe Directions for Healthier Coffee Cake Muffins

  1. Prepare streusel: In a bowl combine brown sugar, oats, 1/2 tablespoon of flour and cinnamon. Cut the cold butter evenly throughout the mixture, to form small crumbs.

  2. Prepare muffins: Preheat oven to 350 degrees. Line muffin tins with paper liners and lightly spray with canola oil. In a small bowl, whisk together flours, baking powder, and baking soda; set aside.

  3. Grate the apples onto a piece of cheesecloth or a teatowel, and wring out the excess moisture. Using an electric mixer, beat together ricotta cheese, sour cream, vanilla yogurt, applesauce granulated sugar, and vanilla on medium speed until smooth. Add egg and egg whites one at a time, beating after each. With mixer on low, beat in flour mixture just until combined. Stir in grated apples.

  4. Divide half the batter among muffin cups; top with half the streusel. Cover with remaining batter; top with remaining streusel. Bake until a toothpick inserted in the center of a muffin comes out clean, 20-25 minutes. Cool in pan 5 minutes, then transfer to a rack to cool completely.
