A healthier version of the fluffy cinnamon rolls

Recipe Ingredients for Healthier cinnamon rolls

6.33 cup Robin Hood All Purpose Whole Wheat Flour
2 cups warm water
1/2 cup sugar
4 teaspoons dry yeast
2 eggs
1 teaspoon salt
1/3 cup canola oil
5/8 cup Parkay light stick
1 cup brown sugar
1 1/2 tablespoon cinnamon
1 cup powdered sugar
2 tablespoons 1% milk
1 teaspoon vanilla extract

Recipe Directions for Healthier cinnamon rolls

  1. Dissolve the yeast in the warm water. Let sit for 1-2 minutes.

  2. Add sugar and salt. Mix.

  3. Add cooking oil, 2 eggs and 2 cups of flour. Beat until smooth.

  4. Stir in 3 more cups of flour.

  5. Begin kneading the dough and add the final cup of flour. If the dough seems too sticky knead in more flour 1/4 to 1/2 cup at a time.

  6. Let the dough rest on counter for 15-20 minutes.

  7. While resting, mix 8 tablespoons butter brown sugar and cinnamon to make filling.

  8. Roll dough into a rectangle that is 24 to 30 by 16 inches.

  9. Spread with filling.

  10. Roll from wide side (24-30 inches).

  11. Score and then cut with floss about 2 inches wide. Put but side up in a greased 9X13 pan.

  12. Set in a warm place to rise for 45 minutes.

  13. Bake at 350 for 25 minutes or until golden brown. Allow to cool before turning out of pan and glazing.

  14. Glaze is made by mixing 2 tablespoons butter, 2 tablespoons milk, 1 cup powdered sugar and 1 teaspoon vanilla extract.
