10 serving 60% cacao bittersweet chocolate chips (Ghirardelli)
1 tsp Vanilla Extract
1/2 cup Egg Beaters
60 serving Madhava coconut sugar
1/2 cup Sugars, Granulated
2 serving Organic Raw Cacao Nibs (Navitas Naturals)
8 tbsp Rice Bran Oil
4 tbsp Unsalted Butter
1/2 tsp Cinnamon, Ground
1/2 tsp Kosher Salt
1 tsp Pure Baking Soda
4 tbsp Flaxseed
1 cup dry Quick Quaker Oats
1 cup Whole Wheat Flour
1/2 cup All Purpose Flour

Recipe Directions for Healthier Chocolate Chip Cookies

Preheat the oven to 350. Line two baking sheets with parchment paper. Whisk the flours, oats, flaxseed (finely ground), baking soda, salt and cinnamon in a bowl. Beat the rice bran oil, melted butter, granulated sugar and 1-1/4 cup coconut sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the egg substitute, mixing well. Add the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the 1 cup chocolate chips and 1/3 cup cacao nibs. Refrigerate dough 15 to 30 minutes. Using a #70 scoop, drop scoops of dough onto the prepared baking sheets about 2 inches apart. Bake until golden brown, about 8-11 minutes, switching pans halfway through baking time. Let cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.
