Recipe Ingredients for Healthier Chocolate Chip Cookies

3/4 c flour
1/2 c whole wheat pastry flour
1/4 t baking soda
1/4 t salt
1 T ground flaxseed
2 T unsalted butter
3 T unsweetened applesauce
3 oz Semi-Sweet Chocolate Morsels
2 t vanilla extract
3/4 c brown sugar

Recipe Directions for Healthier Chocolate Chip Cookies

Combine flaxseed with 3 T water and let it set for 10 minutes while you gather your other ingredients. Combine flours, baking soda and salt in a medium bowl. Combine butter, applesauce, and vanilla until well blended. Mix in egg and then brown sugar. Stir in flour mixture. Reserve 50 chocolate chips, stir in rest to cookie batter. Using 1 T dough per cookie (small disher) scoop cookies onto parchment-lined cookie sheets. Place remaining chocolate chips onto cookie and press in slightly. Bake at 350 for 11-13 minutes until very lightly browned - one sheet at a time, do not overbake. Rest on cookie sheets for 5 minutes and then remove to cooling rack. These are a bit sweet - might cut back on the brown sugar next time.
