This is a modification of a recipe found on this website. I used lower fat and lower sodium options without sacrificing flavor.

Recipe Ingredients for Healthier Broccoli Cheddar Soup

4 c broccoli florets (fresh or frozen)
4 c Fat Free Reduced Sodium Chicken Broth
1 1/4 c skim milk
2 1/4 c healthy request cream of chicken soup (one 10.5oz can)
2 T corn starch
10 oz Reduced Fat Mild Cheddar Shredded Cheese
1 shredded carrot

Recipe Directions for Healthier Broccoli Cheddar Soup

  1. Put all but 1/4c broth in pot with broccoli and simmer broccoli in the chicken broth until tender.

  2. Reduce heat to low and add shredded carrot.

  3. Combine milk and cream of chicken soup and add to broth. Mix cornstarch and remaining broth and add to soup.

  4. Simmer until thickened.

  5. Add shredded cheese and simmer just until melted.
