Changed the original recipe to light vanilla soy milk, added 2 more slices of bread, and placed in a slightly bigger pan. It saved 15 calories per serving!

Recipe Ingredients for Healthier Bread Pudding (Patty's Version)

8 slices light wheat bread
2 T. butter, melted
1/2 c. raisins
4 eggs, beaten
2 cups Light Vanilla Soymilk
3/4 c. sugar
1 tsp. ground cinnamon
1 dash nutmeg
1 tsp. vanilla

Recipe Directions for Healthier Bread Pudding (Patty's Version)

  1. Preheat oven to 350 degrees.

  2. Break bread into small pieces into an 11x7 pan. Drizzle melted butter over bread. Sprinkle raisins over top.

  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. our over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.

  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
