Recipe Ingredients for Healthier Biscotti with Almonds or Cashews

1/2 cup Buckwheat Flour (or 1/2 Cup of any whole grain wheat flour; pour that bleached stuff in the trashcan!)
1/4 cup Wheat Germ (high in protein, fiber, vitamins etc.)
1/3 cup Cashews or Almonds (Good fat, protein, etc.)
1/3 tsp Salt
1/3 tsp Baking Powder
1/3 tsp Baking Soda
1/3 tsp Vanilla Extract (for deliciousness)
1/3 cup splenda (Xylitol or Brown Sugar)
1 Egg
1 tbls Egg White (I use eggs enriched with Omega-3 fat, but feel free to substitute all of it for egg whites)

Recipe Directions for Healthier Biscotti with Almonds or Cashews

  1. As presented these are only semi-sweet, if you have a major sugar tooth, add just a little more, but don‚??t overdo it!

  2. Preheat oven to 325F. Chop nuts into pieces, halves work just fine. Combine all dry ingredients, then stir in eggs and vanilla extract and beat until a very thick dough forms. On a floured surface roll into a log shape about 12‚?≥ - 13‚?≥ long and 2‚?≥ thick. Place on greased cookie sheet and bake for 20-25 minutes. After cooking, remove from the oven and let the log cool for about 5 minutes. After time has elapsed, chop diagonally and place back in the oven for another 10-15 minutes. Remove, cool, and enjoy.
