Recipe Ingredients for Healthier Banana Walnut Muffins

1/3 cup flour
1 1/2 ounces almonds, food processor
1/3 cup whole wheat flour
1/2 c whole wheat flour
1/2 c brown sugar
1 t baking powder
1/2 t baking soda
1/8 t salt
1 c mashed banana
1 egg
1 egg white
1/4 cup buttery spread, melted
1/4 cup buttermilk
1 t vanilla
1/2 cup chopped walnuts

Recipe Directions for Healthier Banana Walnut Muffins

  1. Preheat oven to 350.

  2. Mix flours, sugar, powder, soda, and salt. With a mixer, blend remaining ingredients except walnuts until banana is smooth. Mix dry ingredients into moist. Stir in walnuts.

  3. Pour batter into 12 lightly-oiled muffin cups. Bake 15-20 minutes, until lightly browned and toothpick comes out clean.
