Recipe Ingredients for Healthier Banana Nut Muffins

4 ripe bananas, smashed
1/2 cup organic unsweetened applesauce
1/3 cup Splenda sugar blend for baking
2 egg whites
1 teaspoon vanilla
1 teaspoon baking soda
1/8 teaspoon salt
3/4 cup flour
3/4 cup organic stone ground whole wheat flour
1 cup walnuts, chopped

Recipe Directions for Healthier Banana Nut Muffins

  1. Preheat oven to 350 degrees. With a wooden spoon, mix applesauce into the mashed bananas in a large mixing bowl.

  2. Mix in the Splenda sugar blend, egg whites, and vanilla.

  3. Sprinkle the baking soda and salt over the mixture and mix in.

  4. In a separate bowl, sift together both flours. Then add the flour to the mix, and stir until it is just incorporated. Fold in the chopped walnuts.

  5. Pour or spoon mixture into prepared muffin tins. Bake for 20-25 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a wire rack.
